Stuffed with duck and pork mince, local black truffle, shiitake mushroom, black fungi and lup cheong sausage

Glazed with pat chun vinegar, local honey and aromatic spices

Served with claypot duck rice, taro, chives and seared foie gras

Available as an optional addition to the tasting menu

Red choux au craquelin filled with white chocolate ganache, coconut sorbet and fresh raspberries
